Traditional Smoking Process

At Ullapool Smokehouse, we honour traditional smoking techniques:

1. Curing: Our salmon is dry-cured using large grain sea salt and brown sugar, a process that takes over twelve hours to gently infuse flavour.
2. Pellicle Formation: Post-curing, the salmon rests overnight in a chilled environment, developing a glossy surface known as the pellicle, which enhances smoke adhesion.
3. Smoking: The salmon is then smoked in our brick kiln over smouldering oak shavings sourced from used whisky barrel staves. This method, free from artificially warmed air and forced ventilation, imparts a deep, robust flavour.

Sourcing Local Excellence

We source our salmon from Wester Ross Fisheries, located nearby. Renowned for their award-winning, sustainably farmed salmon, they hand-rear their fish to RSPCA Freedom Foods certified standards in the pristine waters of Loch Broom and Little Loch Broom. This commitment to quality ensures a superior product for our customers.
