Our Story
Uilebheist Distillery & Brewery was born out of a love for Scotland’s ancient brewing and distilling traditions. The name “Uilebheist,” meaning “The Beast” in Gaelic, reflects the wild spirit of the Highlands that inspires us every day. The distillery and brewery are rooted in the history of the land, with a vision to create world-class products that respect both tradition and innovation.

Our Process
Distilling
At Uilebheist, we pride ourselves on our small-batch distilling process, which allows us to ensure the highest quality at every stage. We begin with the finest malted barley, locally sourced, and blend it with pure water from the surrounding hills to create our unique mash. After fermentation, the whisky is distilled in copper pot stills, which are closely monitored for temperature and timing to achieve the perfect flavour profile.
The whisky is then transferred to oak casks for maturation, where it absorbs complex flavours, deepening and enriching with age. Every stage of our process is designed to bring out the best qualities in our whiskies, resulting in smooth, well-rounded spirits.
Brewing
